I’ve been obsessed with turmeric lately. Honestly, I’d never cooked with it before, but I’d been reading about all of it’s health benefits:
Turmeric is a plant. You probably know turmeric as the main spice in curry. It has a warm, bitter taste and is frequently used to flavor or color curry powders, mustards, butters, and cheeses. But the root of turmeric is also used widely to make medicine.
Turmeric is used for arthritis, heartburn (dyspepsia), stomach pain, diarrhea, intestinal gas, stomach bloating, loss of appetite, jaundice, liver problems and gallbladderdisorders.
It is also used for headaches, bronchitis, colds, lung infections, fibromyalgia, leprosy, fever, menstrual problems, and cancer. Other uses include depression, Alzheimer’s disease, water retention, worms, and kidney problems.
Some people apply turmeric to the skin for pain, ringworm, bruising, leech bites, eyeinfections, inflammatory skin conditions, soreness inside of the mouth, and infected wounds.
Does it get any better than that??
This wrap is incredible. I had to force myself to eat something different for dinner after having it a few times last week because not only is it delicious and healthy, but it’s insanely easy to make.
- ¼ package firm tofu
- 1 tbsp turmeric
- ½ tsp salt
- ½ tsp chili powder
- 1 tbsp coconut oil
- ½ an avocado, sliced
- 1 whole wheat tortilla
- salsa
Instructions:
- Heat coconut oil in a medium skillet over medium heat.
- Add the tofu, turmeric, salt, and chili powder and saute for about 5 minutes or until the tofu is cooked all the way through.
- Remove from the heat.
- Lay tortilla flat on a plate and layer the cooked tofu mixture, sliced avocado, and salsa on the tortilla.
- Wrap the tortilla into a burrito and eat right away or place “burrito” in skillet to brown the outsides.
- Eat and enjoy!
